<li><span style="font-family: Arial, Helvetica, sans-serif;">In a heavy bottomed pan, heat 2 cups of sugar with 3/4th of a cup of water. Let the sugar dissolve and bring it to boil</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Remove from heat and pour in the gelatin mixture. Stir well and add the vanilla extract</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Divide the mixture into separate bowls depending upon the number of colors you need</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Add in a few drops of food color and mix well</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Pour the mixture into the prepared glass trays and refrigerate overnight </span></li>

Being the veggie that I am, I got upset on seeing the post. But when someone suggested the idea of replacing chicken wings with paneer cubes, I tried it immediately and it turned out to be perfect and absolutely yummy!</span></div>

Mix with a fork</span></span></li>

<li style="text-align: justify;"><span style="background-color: white; color: #141823; line-height: 19.3199996948242px;"><span style="font-family: Arial, Helvetica, sans-serif;">Put this mixture in a zip lock bag and add paneer cubes into it. Close the bag and give it a good shake, so that all the paneer cubes are well coated with the powder</span></span></li>
<li style="text-align: justify;"><span style="font-family: Arial, Helvetica, sans-serif;">Line the baking tray with aluminium foil and grease with olive oil</span></li>
<li style="text-align: justify;"><span style="font-family: Arial, Helvetica, sans-serif;">Place the coated paneer cubes on the foil, drizzle some oil over them and sprinkle a little of the remaining spice powder over them</span></li>
<li style="text-align: justify;"><span style="font-family: Arial, Helvetica, sans-serif;">Turn over the cubes and again drizzle some oil and sprinkle all the remaining spice powder over them</span></li>
<li style="text-align: justify;"><span style="font-family: Arial, Helvetica, sans-serif;">Bake in a pre-heated oven at 150 deg C for 15 minutes, on the LOWER rack</span></li>
<li style="text-align: justify;"><span style="font-family: Arial, Helvetica, sans-serif;">Remove the tray from oven, turn over the cubes, drizzle oil over them and now bake on the MIDDLE rack at 180 deg C for 10 minutes</span></li>
<li style="text-align: justify;"><span style="font-family: Arial, Helvetica, sans-serif;">Serve hot with ketchup or mint chutney! You could even attach them to mini wooden skewers to give the restaurant feel! </span></li>

Continue to run the mixer for another minute. You would notice that the peanuts by now would have started releasing oil and it would have become a paste</span></li>

These 20 cakes were selected from over a hundred other cakes prepared by her students last year. I was so excited on receiving the first prize for one of the categories. </span></div>

I planned well in advance, purchased the ingredients and geared up for the D-Day.</span></div>

<li style="text-align: justify;"><span style="background-color: white; color: #333333; font-family: 'Open Sans', 'Helvetica Neue', Helvetica, Arial, sans-serif; font-size: 17px; line-height: 27px;">Later, carved the cake and gave it a first coat of icing (This is called crumb coating)</span></li>
<li style="text-align: justify;"><span style="background-color: white; color: #333333; font-family: 'Open Sans', 'Helvetica Neue', Helvetica, Arial, sans-serif; font-size: 17px; line-height: 27px;">Then came the toughest part - To completely hand pipe the cake with a basket weave design, using buttercream (Chennai is facing its hottest July ever and you can imagine my struggle with buttercream!!). It took me 3 hours at a stretch to complete the icing. After the first 2 hours of icing, my fingers got numb, I couldn't bend my fingers any further. Tears were rolling down my cheeks due to the pain that my fingers were experiencing but all that ran in my mind was to complete the cake and do justice to the prize that I would be felicitated with. </span></li>

<li><span style="font-family: Arial, Helvetica, sans-serif;">Divide the dough into equal balls</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Flatten one ball and fill a teaspoon of the prepared capsicum-cheese mixture, close the ball and roll into thick parathas on a flour dusted surface</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Heat a pan and cook the parathas evenly on both sides by adding little oil</span></li>

<li><span style="font-family: Arial, Helvetica, sans-serif;">Soak the almonds in water for 1-2 hours. Peel the skin and grind them with milk into a very smooth paste, without any grains (Do not add more more milk, than mentioned)</span></li>

<li><span style="font-family: Arial, Helvetica, sans-serif;">In a heavy bottomed pan, place sugar and add water just enough to immerse it (about 1/2 a cup)</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Add cardamom powder and keep stirring in medium flame</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Let the sugar dissolve and once it reaches one string consistency ** add the ground almond paste and mix well in medium flame</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Keep stirring and reduce the flame after 10 minutes</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">At a point, the mixture will thicken and start leaving the sides of the pan. Now immediately pour the mixture on to the greased tray and level it</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">After allowing it to cool for 10 minutes, while it is still warm, cut into pieces of your desired size</span></li>

Her husband wanted to surprise his BMW fanatic friend on his birthday, with a special cake. All that he wanted was a chocolate cake base, with a small white BMW X6 car model, shaped out of fondant (sugar paste). (Sounds simple?!)</span><br />

So I wanted to challenge myself a little further this time and then planned to make a small cake and carve it in such a way that it resembled BMW X6 model. The B.Tech ECE student, who has been sleeping within me, woke up and wanted to have LEDs in the cake, which would take it to the next level!</span><br />
<span style="background-color: white; color: #333333; font-family: 'Open Sans', 'Helvetica Neue', Helvetica, Arial, sans-serif; font-size: 17px; line-height: 27px;">Connecting two LEDs with a switch, battery and making them glow is no big deal. But the challenge was to insert that as the headlights of the car cake and at the same time, not affect the edible part.</span><br />

I have tried an eggless version and wanted a dash of pink in my cake, hence made cute vanilla-strawberry marble hearts for the surprise center. It is a double process of baking but not difficult at all. Try it out and surprise your near and dear ones, in this season of Love!</span></div>

<li><span style="font-family: Arial, Helvetica, sans-serif;">Line an 8" square tin with butter paper and grease the sides</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Pre-heat oven to 175 C</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Sieve all dry ingredients except the sugar</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Add sugar to the sieved dry ingredients and mix well</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Add vinegar to milk and keep aside for 5 minutes, for it to curdle</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Once it curdles, add oil and vanilla</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Pour this to the dry ingredients and mix till they are combined</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Add strawberry emulsion/food coloring (if adding) and gently mix. You can leave it half mixed for marble effect, or mix it till entire batter is evenly colored (Make sure not to over beat the mixture)</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Pour the batter into the prepared pan (batter will be thick) Spread evenly and bake at 175 C</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">After 10 minutes, reduce temperature and bake for 15-20 minutes, until a tooth pick inserted comes out clean</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Cool completely and refrigerate before cutting them into heart shapes</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Once you feel the cake is firm enough, (I refrigerated it over night - atleast an hour or 2 would do) cut it into hearts using a cookie cutter or into any desired shape. Keep aside</span></li>

<li><span style="font-family: Arial, Helvetica, sans-serif;">Grind the ingredients mentioned under "To be ground into a smooth paste" with very little water. Keep aside</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Chop and boil the vegetables. Keep aside</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">In a thick bottomed vessel, heat oil and temper with cumin seeds</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Add chopped onions and fry till it turns translucent</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Add the tomato puree and cook for 2 minutes</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Add the ground paste, boiled vegetables, red chilli powder, coriander powder, salt and cook for 10 minutes</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Allow the mixture to boil and remove from heat. If desired, you can top it with some fresh cream or thick coconut milk for a rich texture</span></li>

This time I made these colorful cake pops with the left over cake pieces/crumbs and <a href="http://mycheerfulkitchen.blogspot.in/2014/11/whole-wheat-orange-jaggery-cupcakes.html" target="_blank">chocolate ganache</a>, for my little cousins.</span></div>

<li><span style="font-family: Arial, Helvetica, sans-serif;">Rub the cake pieces with your hands, to form even crumbs</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Add the frosting little at a time and mix well so that the mixture binds well. Do not add too much of frosting, as it would make the mixture too moist</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Make small balls/laddus and place them on a tray lined with butter-paper or aluminium foil</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Freeze the cake balls for 15-30 minutes, till they become hard</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">In the meanwhile, melt the grated chocolate using a double boiler/microwave method</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Dip one end of the lollipop stick in the melted chocolate and insert it into the frozen cake ball</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Dip the ball into melted chocolate, and place on the lined tray with the ball facing down and stick up</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Repeat it for other balls and refrigerate them for a minimum of 15 minutes</span></li>

<li style="text-align: justify;"><span style="font-family: Arial, Helvetica, sans-serif;">Sieve maida, cocoa powder, baking powder and salt together. Keep aside</span></li>
<li style="text-align: justify;"><span style="font-family: Arial, Helvetica, sans-serif;">Pre-heat oven to 175C and line 6 muffin moulds with cupcake paper liners or grease a 6" round tin</span></li>
<li style="text-align: justify;"><span style="font-family: Arial, Helvetica, sans-serif;">Add vinegar to milk and set it aside to curdle (for about 5 minutes)</span></li>
<li style="text-align: justify;"><span style="font-family: Arial, Helvetica, sans-serif;">Beat together sugar and oil, till the sugar partly dissolves</span></li>
<li style="text-align: justify;"><span style="font-family: Arial, Helvetica, sans-serif;">Mix milk-vinegar mixture with the sugar and oil mixture. Add in the beetroot puree and beat well for 2-3 minutes</span></li>
<li style="text-align: justify;"><span style="font-family: Arial, Helvetica, sans-serif;">Gradually fold in the dry ingredients and mix them till well incorporated</span></li>
<li style="text-align: justify;"><span style="font-family: Arial, Helvetica, sans-serif;">Pour the batter to 3/4th of each muffin mold and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean</span></li>
<li style="text-align: justify;"><span style="font-family: Arial, Helvetica, sans-serif;">Cool them completely on a wire rack and in the meanwhile prepare the frosting</span></li>

<li style="text-align: justify;"><span style="font-family: Arial, Helvetica, sans-serif;">Add the cream and beat well till you get stiff peaks</span></li>
<li style="text-align: justify;"><span style="font-family: Arial, Helvetica, sans-serif;">Cut a corner or a zip-lock bag and insert the nostle of your choice. Fill in the icing and decorate the cupcakes</span></li>
<li style="text-align: justify;"><span style="font-family: Arial, Helvetica, sans-serif;">Make sure the cupcakes are completely cooled before you frost them</span></li>
<li style="text-align: justify;"><span style="font-family: Arial, Helvetica, sans-serif;">You can also sprinkle edible sparkles or some chocolate shavings on top</span></li>

While hunting my refrigerator, I found a pack of M&Ms lying there unopened. It reminded me of a recipe that I had come across in <a href="http://jeyashriskitchen.com/">Jeyashriskitchen.com</a> and bookmarked long back. With pretty much simple ingredients and easy method, I tried them right away and yeah the colorful cookies are now baked to perfection and waiting to surprise my little cousins!</span></div>

<li><span style="font-family: Arial, Helvetica, sans-serif;">Baking soda - 1/4 teaspoon</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Sugar - 1/4 cup</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Milk - 1/8 cup</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Butter - 2.5 tablespoons (softened)</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Vanilla essence - 1/4 teaspoon</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">M&Ms or gems - as needed **</span></li>

** <i>You could substitute the gems with choco-chips or any nuts or just omit them and make plain cookies too!</i><br />

<li><span style="font-family: Arial, Helvetica, sans-serif;">Sieve the flour and baking soda together</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Powder the sugar and add it to the flour</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">In a separate bowl, mix together milk and softened butter and beat well till it is creamy</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Add the milk-butter mixture to the dry ingredients and knead into a soft dough</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Pre-heat oven to 160C and line a baking tray with parchment paper or any grease-proof/butter paper</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Roll out the dough thin and cut them in your desired shape using cookie cutters/lids/knife. While rolling out the dough, I found it too sticky, so I added a tablespoon of wholewheat flour(atta), kneaded again and also dusted the floor with some flour and then rolled it out</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Place them in the lined baking tray, leaving about half an inch gap between each cookie (as they expand a little while baking) and decorate them with M&Ms/gems as per your wish</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Bake them for 10-15 minutes (Rotate the tray during the last 2-3 minutes)</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">The cookies will not brown much, just check if the sides are browned and then after they are baked, remove the baking tray and place it on top of the oven for 5 minutes, this will ensure the bottom of the cookies are also baked well</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Cool them completely on a wire rack and store in air-tight container</span></li>
