Badam-Walnut-Poha Laddoo (Easy and healthy)


Can you imagine a laddoo without ghee or sugar and yet taste delicious??!! Here it is a vegan laddoo that is low in fat but high on taste! Filled with the goodness of almonds, walnuts and flattened rice (poha/aval) and sweetened with palm sugar. An absolute healthy treat for the festive season :)

INGREDIENTS:
  • Almonds - 1/4 cup
  • Walnuts - 1/4 cup
  • Thin flattened rice - 1/2 cup (poha/aval)
  • Palm sugar - 1/2 cup (I used organic powdered palm sugar. You can also use jaggery)
  • Cardamom powder - 1/4 teaspoon


METHOD:
  1. Soak almonds in water for 3 hours
  2. Dry roast the walnuts and poha separately and keep aside. The poha should be roasted very well so that it becomes crisp. Make sure to use only "Thin" variety of the flattened rice 
  3. Crush the poha with hands so that it breaks but not powders
  4. Remove the skin of the soaked almonds and grind it along with the roasted walnuts 
  5. To this, add the palm sugar/jaggery and cardamom powder and grind it
  6. Add this ground mixture alond with the crushed poha and mix well 
  7. Shape them into small balls or laddoos. Your healthy laddoo is ready! Store them in air-tight container
