Oh yeah! I have been posting only sweets for Diwali so far.. so for the extra crunch, here is a murukku recipe that I learnt from my mom. It is simple, crispy and perfect snack to go with the festive sweets! Generally murkku is made with rice flour and gram flour. This time myself and mom tried it by replacing the gram flour with roasted gram flour (pottu kadalai) and the result was a perfect crispy murukku! Try it out to relish its crispness :)
INGREDIENTS:
- Rice flour - 3/4th cup
- Roasted gram dal powder - 1/4 cup
- Salt - as needed
- Asafoetida (Hing) - 1/2 teaspoon
- Water - as needed
- Oil - for deep frying
METHOD:
- Powder the roasted gram dal/pottu kadalai and sieve it
- Sieve the rice flour
- Mix the rice flour, roasted gram flour, salt and hing with water and form a soft dough
- Heat oil in a heavy bottomed pan
- To check if the oil is heated enough, put a small piece of the dough into the oil. If it sizzles, then the oil is ready
- Take a handful of dough, put it in a murukku press of your choice and make murukkus in hot oil
- Cook evenly on both sides
- Remove from oil and place it on a kitchen towel/tissue, to remove the excess oil
- Store in air-tight containers. Serve with the festive sweets or make it on a rainy day and enjoy with a hot cup of tea :)
