Custard Powder Cookies


After a wonderful Dussera season, I am sure all of us are gearing up for Diwali :) I am planning to come up with some interesting recipes as MyCheerfulKitchen celebrates its first Diwali!!! 
Our lovely guests during Navaratri gifted us with loads of fruits and mom prepared yummy fruit custard. While I was thinking about what to do with the remaining custard powder, I came across an interesting cookie recipe in Jeyashriskitchen.com. The original recipe uses vanilla custard. You can use any flavor of your choice. I used strawberry flavor and the result was just YUMM!! This can also be a wonderful gift for Diwali. Make small cookies and pack them for your dear ones and celebrate the festival with lots of love and sweetness :)



INGREDIENTS: (Makes 15 cookies)
  • Maida - 1/2 cup
  • Custard powder - 2 tablespoons (any flavor)
  • Baking powder - 1/4 teaspoon
  • Baking soda - 1/8 teaspoon
  • Sugar - 1/4 cup
  • Oil - 1/4 cup
  • Milk - 2 to 3 tablespoons


METHOD:
  1. Mix together maida, custard powder, baking powder and baking soda
  2. Powder the sugar and mix it well with oil
  3. Now pour the sugar+oil mixture into the dry ingredients and mix into a smooth dough
  4. If you find it too dry, add a little milk and form a smooth dough
  5. You can store the dough, rolled in cling film, in refrigerator
  6. Pre-heat oven to 170C and line a baking tray with butter paper
  7. Divide the dough into very small balls, flatten them and place them on the baking tray. Make sure to leave about half an inch gap between each cookie, as they would expand
  8. Bake in pre-heated oven at 170C for 10 minutes
  9. The cookies will be soft even after 10 minutes. Nothing to worry as this is perfect and they will become crispier as they cool down. After removing the baking tray from oven, you can place it on top of the oven for a few minutes, this will ensure that the bottom of the cookies also get firm
  10. Cool them completely on a wire rack and store in air-tight containers
