Rose milk flavoured Ice cream


Rose milk is a perfect summer treat that cools our body and pleases our taste buds. 
How about an easy homemade ice cream, that does not require any special ingredients or instruments? Here it is.. Try it out and it will surely be an instant hit with all your loved ones

Fruit Parfait

Summer at its peak and so here is a summer special treat in My Cheerful Kitchen :) This is a healthy snack/breakfast which is loaded with goodness of fruits and yogurt!! I came across this recipe in jeyashriskitchen and modified it according to my preference. So why wait? Make these in individual servings, refrigerate, serve chilled and relish the heavenly goodness, absolutely guilt free :)



INGREDIENTS: (Serves 4)
  • Yogurt - 1 cup
  • Any flavored yogurt - 1 cup, optional (if not using, then just use plain yogurt)
  • Fruits of your choice. I used - apple, kiwi, pomegranate
  • Digestive biscuits - 2-3, crushed
  • Muesli/corn flakes or any breakfast cereal - 5-6 Tbsp, crushed
  • Papaya - 1 cup
  • Sugar - 2-3 Tbsp
  • Vanilla essence - 2 Tsp 


METHOD:
  1. Hang the curd in muslin cloth for 15-20 minutes. This is to get thick curds. Another easy way would be to place the curd in a tea strainer with a vessel in the bottom
  2. Take half of the hung curd. Add a tea-spoon of sugar and vanilla essence and mix well. Keep aside
  3. Blend the papaya into smooth paste. Cook the papaya puree in medium flame for 3 minutes. Allow it to cool
  4. Mix the papaya puree, half of the curd, 1 Tsp sugar and vanilla essence together and  blend again. Keep aside
  5. Take any glass serving of your choice. For the bottom most layer, place crushed digestive biscuits
  6. Now spoon in a layer of the papaya flavored yogurt
  7. Next layer it with crushed museli/corn flakes and some cut fruits of your choice
  8. Now add in a layer of any readymade flavored yogurt (i used strawberry). If not then use the prepared plain yogurt mixture or papaya yogurt mixture
  9. Top it up with more fruits/nuts of your choice and arrange them at your creative best, for that added class and elegance :)
  10. Refrigerate it for a few hours or overnight and enjoy it as a healthy breakfast to kick start your day or even as a snack at any time, when hunger strikes!!


NOTES:
  • The method that I have given above is just a reference, sky is the limit and you change it according to your taste and preferences!
  • For the papaya-yogurt layer, you can replace papaya puree with mango puree too
  • All three yogurt layers can be modified according to your choice or just have a plain layer too, with a little essence and sugar
  • Sugar can be completely avoided if you are too conscious or can add in a bit more if you want it as a dessert
  • So go on and create your own tasty and colorful parfait and enjoy summer!

Lemon-Mint Cooler

Welcome summer with this fresh lemon mint cooler! 



INGREDIENTS:
  • Lemon juice - from 1 lemon
  • Mint leaves - 1/4 cup
  • Ginger - 1" piece
  • Water - 1 and 1/2 cups
  • Ice cubes - 2 or 3
  • Honey - 2-3 Tbsp

METHOD:
  1. Crush mint leaves and ginger together
  2. Strain the liquid from the crushed mint leaves and ginger
  3. Add to this, lemon juice, honey and water
  4. Pour this to the serving glasses, add ice cubes and garnish with mint leaves before serving

Mango Icecream

It's summer time and mangoes have arrived in style!! So I have begun summer in a tasty way with fresh home made mango icecream without any preservatives or gelatin. Just blend and freeze, that's it. Surprise your loved ones with this fresh icecream topped with homey or caramel sauce and some nuts! No one will believe it is home-made! Take all the praise but keep the secret with yourself, that it is absolutely easy to prepare :)
This recipe is inspired from Chef Sanjeev Kapoor's collections.



INGREDIENTS:
  • Mango puree - 1 cup
  • Fresh cream - 1 cup
  • Milk powder - 1 cup
  • Milk - 1 cup
  • Powdered sugar - 1/2 cup + as needed


METHOD:
  1. Blend all ingredients together. Taste and check if the sweetness is fine for you. It will depend on how ripe and sweet your mango is. I added about 3/4 cup powdered sugar in total, as my mangoes were not so sweet
  2. Store in an air-tight container and freeze it over night
  3. That's it!! Lip smacking ice-cream is ready!
  4. In case you find some ice crystals over the ice cream after freezing, just blend it gently with a hand mixer and freeze it again
  5. While serving, add a spoon of honey and top it with chopped nuts

Masala Chaas

I first tasted chaas in Rajdhani restaurant and simply loved it! It is an excellent summer chiller and also a good accompaniment during heavy meals as it helps in good digestion. It is a very simple recipe and tastes best when served chilled!



INGREDIENTS:
  • Whisked curds - 2 cups
  • Cumin seeds powder - 1 Tsp
  • Ginger-green chilli paste - 1/2 Tsp
  • Salt - To taste
  • Black salt - 1/2 Tsp (optional)
  • Oit - 1 Tsp
  • Cumin seeds - 1/4 Tsp
  • Asafoetida - 1/4 Tsp
  • Chopped coriander leaves - for garnishing


METHOD:
  1. Combine all ingredients except oil, cumin seeds and asafoetida and mix well. Black salt is optional. I did not add as I do not like the flavor much
  2. If you feel the mixture is too thick, add half a cup of water
  3. Temper the mixture with cumin seeds and asafoetida
  4. Garnish with chopped coriander leaves
  5. Serve chilled
