Ada Pradhaman


Ada Pradhaman is a traditional Kerala dessert, which is made out of ada (rice flakes) and coconut milk. It has a rich texture and tastes divine when served warm :)
I made ada pradhaman for Onam and all of us at home enjoed it!

INGREDIENTS:
  • Ada /rice flakes - 1 cup
  • Jaggery - 1 cup
  • Thick coconut milk - 1/2 cup
  • Thin coconut milk - 1 cup
  • Cardamom powder - 3/4 teaspoon
  • Dry ginger powder - 1/2 teaspoon (optional)
  • Cashew nuts - 2 tablespoons
  • Raisins - 2 tablespoons
  • Ghee - 2 tablespoons


METHOD:
  1. Wash the ada. Bring water to boil in a pan. Add ada to boiled water and let it stay for 15 minutes. Drain the water and keep aside.(I used store bought ada. You can use homemade ada too)
  2. Heat jaggery in 1 cup water and melt it. Strain it to remove impurities
  3. Heat ghee in a pan and fry the cashews till they slightly brown. Next add the raisins and fry them. Remove them on a plate and in the same pan, add the ada and saute for a few minutes
  4. Add the strained jaggery to the ada and thin coconut milk. Cook on medium flame for 15 to 20 minutes stirring frequently until it thickens slightly.
  5. Add the fried cashews, raisins, dry ginger powder and cardamom powder
  6. Lower the flame and add thick coconut milk and cook for maximum a minute (Do Not boil after adding the thick coconut milk)
  7. Put off flame before it starts to boil and serve warm
